Myths about Honey

 

Honey that attracts ants is a fake honey?

NO, the major component of honey is sugars: fructose and glucose, which is about 70-80%, and the third greatest component is water which is 15-20%, and it is a normal phenomenon that ants are attracted by sugars in the honey. However, the water content in the honey may affect how quickly the ants are attracted by honey. The honey that is not so sticky and is watery may release more scent molecules through evaporation, thus attracting ants more quickly.

 

Using a metal spoon to take honey is dangerous?

NO, even though honey is a bit acid, it is the same as any acid edible, where you can still use a metal spoon to take it, but if it stays long enough on metal it can destroy it a bit. So it is not recommended to use a metal container to store the honey or store a metal spoon within the honey for long periods of time.

Honey that crystallizes is a fake honey?

NO, there are several factors that will cause honey to crystallize.

Crystallization of honey depends on the fructose and glucose ratio in the honey. Honey with higher glucose will crystallize faster than the honey with higher fructose content. The water content of honey is another factor in honey crystallization, whereby higher water content which is more than 20% will not crystallize easily compared to honey with a lower water content which is lower than 18%. Besides, storage temperature is also affecting honey crystallization, where a lower temperature might increase honey crystallization.

Honey never spoils?

NO, honey will not spoil only if it is perfectly preserved. Even though honey is acidic food with very low water activity that is not favorable for microorganism growth, when did not seal and stored properly, or let open for extended periods of time, honey will suck moisture from the air surrounding, start to lose taste and aroma, and might be contaminated by microorganism.
